Gijang Son Kalguksu (Seomyeon) | Hand-Cut Korean Noodles on Busan’s Pork Soup Alley

Today’s pick: Gijang Son Kalguksu, located on Busan’s Seomyeon Dwaeji-gukbap Alley.

Kalguksu is a Korean-style noodle dish, similar to udon. In “Son-kalguksu (손칼국수),” “son (손)” means “hand” — so this is hand-cut kalguksu.

You can watch the ajumma (auntie) staff hand-cutting the noodles right at the storefront.

손칼국수 / Son-kalguksu: hand-cut kalguksu
비빔 칼국수 / Bibim Kalguksu: mixed (no-broth) kalguksu
냉 칼국수 / Naeng Kalguksu: cold kalguksu
김밥 / Gimbap: seaweed rice rolls

The interior is tight — the second floor has a particularly low ceiling — and the building is quite old.

And yet the place is always packed with Korean diners.

This time, I ordered Son-kalguksu and gimbap.

Want the large size (+1,000 KRW)? Just say:

◆ Son-kalguksu large, please
KR: 손칼국수 곱빼기 주세요 (Son-kalguksu gobbaegi juseyo)
※ “Gobbaegi” means “large size.”

Both the son-kalguksu and the gimbap are excellent.

Beloved by locals, this is a great combo to pair with Dwaeji-gukbap on the same alley.
