Today’s pick: Halmae Gaya Milmyeon, a SUPER popular shop in Busan’s Nampo area.
★ What is Milmyeon? ★
Milmyeon is Busan’s signature cold noodle dish made with wheat flour — kind of like a Korean take on a chilled noodle dish, served either with broth or mixed dry-style.

The shop is tucked one alley off the main road, so it can be tricky to find — double-check the map before heading over.
First, a quick story about the name. “Gaya (가야)” is a place in Busan — there’s actually a Gaya Station, one stop west of Seomyeon Station on Metro Line 2.
And “Halmae (할매)” means “grandma”.
Wait, what?!
K-drama fans probably already noticed something off.
Because “grandma” in standard Korean is “halmeoni (할머니)”.
But “halmae” also means “grandma”.
Confusing, right?
Here’s the thing: “halmae” is the Busan (Gyeongsang Province) dialect.
Yep — Korean has dialects too.
The Busan dialect — especially among older men — can be so strong that even Seoul natives struggle to follow.
It’s not just intonation — the standard language and the Busan dialect actually use different vocabulary in many cases.
Think of it like an American hearing a thick rural accent for the first time — that kind of distance.

This is “yuksu” — a clear beef broth that always comes with milmyeon.
It comes in a small kettle at every shop.

Starting with the mandu.
These are huge!

Packed with filling, too!

And here’s the milmyeon.
The signature feature: a partially-frozen, slushy broth — exactly what you want in hot weather.

Together, the set looks like this.
Looks great, right?

It’s standard to snip the noodles into bite-size pieces with scissors before eating.
Then give it a good mix.
And the flavor — obviously, it’s great!
Milmyeon always comes with a dollop of red yangnyeomjang (spicy sauce), but it’s usually less spicy than it looks.
This one’s no exception, so even spice-averse diners should be fine.
Halmae Gaya Milmyeon is a beloved go-to in Nampo. Go try it for yourself!
