Today’s pick: Gijang Son Kalguksu, located on Busan’s Seomyeon Dwaeji-gukbap Alley.

Kalguksu is a Korean-style noodle dish, similar to udon. In “Son-kalguksu (손칼국수),” “son (손)” means “hand” — so this is hand-cut kalguksu.
You can watch the ajumma (auntie) staff hand-cutting the noodles right at the storefront.
